    Mmm I love tzatziki, I'll have to give your recipe a try.

    Here's what I mean by soda bread http://en.wikipedia.org/wiki/Soda_bread, I can't get any good Soda here so I only really eat it when I'm home. If you ever try it it's best toasted since it can taste a bit powdery otherwise.

    Cancankant, thanks for the recipe. I was going to make something similar yesterday but I couldn't find any triple sec for my margaritas. If only I'd checked the forums

    I'll post a couple of recipes after work. Otherwise I'd be here for a while and no one will have their orders sent!

    Sorry, I've been super busy with a new website for the last few days so I didn't get around to posting the recipe.
    Here's the cheesecake recipe I use. Despite the ingredients it's pretty light in texture and highly addictive!

    Ingredients:
    6 tablespoons butter
    200g digestive biscuits (crushed into crumbs)
    400g cream cheese
    2 large eggs
    140g caster sugar
    1 1/2 teaspoons vanilla essence
    450ml soured cream

    Topping ingredients:
    55g caster sugar
    4 tablespoons water
    250g fresh berries
    1 teaspoon arrowroot

    You'll also need a 20cm spring form pan.
    Brush the pan with oil and preheat the oven to 190 degrees celcius. Melt butter and combine with biscuits. Press into the bottom of the pan.
    Mix cream cheese, eggs, 100g of sugar and 1/2 teaspoon of vanilla essence in a food processor and process until smooth. Pour over the biscuit base and cook for 20 minutes or until set. (Place the pan on a baking tray in case any of the mixture leaks out). Leave to cool.
    Mix sour cream with the remaining sugar (40g) and the rest of the vanilla essence in a bowl and spoon over the cheese cake. Return to the oven for 10 minutes, cool and refrigerate for 8 hours.

    For the topping put the sugar in a pan with 2 tbsp water on a very low heat until the sugar has dissolved. Increase the heat and add the berries (I think raspberries are best for this) and cook until they begin to soften. Dissolve the arrowroot in the remaining water and add to the berries. Cook on a low heat until it begins to thicken and then leave to cool.

    Remove the cheesecake from the tin and spoon the berries over. Voila!

    Yum, this recipe looks delicious, can't wait to try it! I don't think I'll be able to get raspberries here though, I hope it's ok if I substitute them with strawberries. And I probably won't be able to get arrowroot here either. :/ I hope putting cornstarch instead won't ruin it.:p

    Strawberries should work well.

    You could substitute the topping with jam. Just heat it in a pan with your strawberries and thin it with some water to make a sauce.

    Graham cracker crumbs are pretty common for cheesecake around here.
    Maybe you could try that instead because the thought of using cornstarch doesn't sound too appealing to me.

    You mean Graham cracker crumbs for the base? I just read in wikipedia (looking to see what arrowroot is) that you can substitute arrowroot with cornstarch as a thickening agent, so thought I may put that instead in the sauce. Don't know if the results are the same.

    You can use arrowroot & cornstarch interchangeably. They are just both thickening agents.

    I'm keeping it going with another dessert. You can use dairy ice cream and whipped topping, but it was developed (by me) for a vegan audience!

    Mint Chocolate Nice Cream Pie

    Ingredients (use vegan versions):

    1 chocolate graham pie crust (use vegan version)
    1 pint size (2 cups) of mint chocolate chip soy or other vegan frozen dessert (“ice cream”), I used Temptation Mint Chocolate Chip
    2 cups of Soyatoo Whip topping or other vegan whip topping
    Approx. 1/2 box of Anna’s Chocolate Mint cookies/chocolate wafer cookies or use sandwich
    cookies for more crunch ~~ Anna’s cookies nearly match the chocolate crust color

    Directions:

    Slightly soften the frozen dessert (“ice cream”). Mix the Soyatoo or whip topping into the “ice cream” until blended. Don’t allow “ice cream” to melt.

    Spread about ½ of the mixture into the graham crust.

    Top with a layer of chocolate cookies.

    Spread the remaining “ice cream” on top.

    Top with cookies.

    Freeze overnight or until firm.

    Thaw slightly before serving. If desired, top with extra Soyatoo when serving.

    Your non-vegan relatives will love this. My dad is a very meat and potatoes guy, and he couldn’t get enough. I left the room for a little bit and the whole pie was gone! Good thing I got my piece first…

    Serves: 8

    Preparation time: 30 minutes plus freezing time

    My mom bought me a blender, so I've been making drinks with it a lot.
    I use frozen fruit such as mangoes and raspberries with a bit of fruit juice to sweeten it up.
    Mmmm!
